Magic Apple Wholefoods: Owner of Gibney, The Shorehouse George Kailis revives WA restaurant in Cottesloe

Magic Apple was a smoothie bar in the 1970s, then a vegetarian restaurant chain in the 1980s. Now George Kailis, the coastal dining king behind luxurious Perth eateries Gibney and The Shorehouse, has revived the WA brand and wants to roll it out nationally. His first step is opening Magic Apple Wholefoods in the prominent seaside site at 149 Marine Parade, Cottesloe previously occupied by the long-running Mediterranean café Barchetta. The restaurateur said he had been looking at the location for the past six years. Kailis’ much-anticipated venue embracing the clean-eating and wellness movements opens on October 30 following a $2 million refurbishment inspired by a “Peter Pan treehouse vibe on acid”. “You’re perched up, elevated over North Cottesloe beach,” he said. “It felt really perfect.” Magic Apple is Kailis’ first foray into the $US1.8 trillion global wellness market. “There’s a big gap,” he said. “The wellness industry internationally is going ballistic, but Australia hasn’t really seen it yet in a hospitality sense.” The 110-capacity restaurant, led by former Island Market head chef Rob Baverstock, will open seven days a week for breakfast and lunch before expanding to dinner service in mid-December. “The brief from George was to focus on health and wellbeing, utilising ingredients that taste delicious but also fuel your body,” Baverstock said. “Anything processed was avoided. For example, a beautifully steamed piece of seasoned fish replaces a deep-fried battered offer.” Kailis said Magic Apple, which will employ more than 40 staff, would completely redefine breakfast for Perth diners jaded by bacon and eggs on toast or eggs benedict. Signature dishes include seasoned beef with poached eggs, smashed avocado, tomato dust and green onion mayo; teriyaki eggplant with morning cabbage, scrambled eggs, nori crunch and miso mayonnaise; and steamed sumac salmon with poached eggs, chickpeas, lemon dressing, puffed grains and magic dust. The lunch menu would focus on premium WA produce with grilled organic chicken, steamed market fish, vegetable fritters, crispy tofu and lamb koftas all prepared to order. Kailis added that there would be an “epic” Magic Kids menu to encourage youngsters to eat healthy. He described the overall menu as offering “guilt-free food”. Smoothies designed to “cleanse, repair, nourish and revitalise” would be another focus of Magic Apple, with beverages including unusual ingredients such as sea buckthorn, mesquite, bentonite clay and cordyceps. Kailis Hospitality Group sommelier Nina Throsby and bar manager James Gentile have curated a drinks list that features a short list of wines, ranging from Margaret River pet nats to classic French champagnes, and cocktails. Gentile has created The Magic Mary, a twist on the Bloody Mary including vodka, Magic Mary Mix, mushrooms, tomato juice and Vegemite. “Wellness is moderation,” Kailis said. “Having a beer or a glass of rose, we don’t see that as a bad thing.” Magic Apple will also have an extensive non-alcoholic range, including Magic Sodas made in Margaret River. Kailis plans to open more Magic Apple Wholefoods outlets next year, starting with a second restaurant in the northern suburbs. He also has an eye on the east coast and has already talked to potential partners in Sydney. “I was there recently looking at sites around Bondi and we’ve got some close connections in hospitality over there,” Kailis said. “We really want an interstate presence in the next 24 months. “We don’t want 400 restaurants, we want it to be boutique — this is not a franchise, it’s all owned by us. I hate the word franchise and I hate the word chain.” Kailis said Magic Apple restaurant on beaches in Bondi, Noosa and Byron Bay would be “perfect”. The flagship diner is a significant opening, according to Cottesloe mayor Lorraine Young. “The Cottesloe community has waited patiently for the redevelopment of this important site,” she said. “George Kailis more than doubled the proposed investment to deliver an outstanding hospitality concept in our town — a fresh, vibrant and relevant offering for locals and visitors alike.” Magic Apple Wholefoods was designed by Marcos Cain of Dubai-based Stickman Tribe, who took “nostalgic” inspiration from childhood treehouses. Kailis has a 15-year lease on the building, which is cedar clad to reflect the seaside location as well as the healthy eating direction of the restaurant. Boasting panoramic ocean views, the dining room features a rainbow ceiling mural by local artist Susan Respinger. The sustainable ethos of Magic Apple is carried throughout the entirely plastic-free business, which has 100 per cent biodegradable packaging and a no-to-low waste kitchen. Staff are dressed in sustainable outfits from Hemp Clothing Australia while Pottery for the Planet made the ceramic crockery. The Magic Apple Wholefoods brand was established in Perth in the 1970s, with stores in the city, Karrinyup, Subiaco, Claremont and Innaloo in the 1980s. Kailis said there was also a Magic Apple shop on Marine Parade in Cottesloe. “The concept was way ahead of its time,” he said. “Its menus were health-food leaning and listed key dietary information. “It was brilliant in every way.” In reviving Magic Apple, and borrowing its original psychedelic branding, Kailis hopes to promote “mindful choices” in a hospitality setting. “Magic Apple is something very different to what is in market presently, and my hope is that it becomes an important figure in our local dining landscape,” he said.
